THE OIL
EXTRA VIRGIN OLIVE OIL "RIVIERA LIGURE" ROI
An oil abtained from the first cold pressing with a stone mill of selected "Taggiasca" olives. This oil is charaterized by the intense yellow color, the delicate aroma, and the sweet flavour, tasting slightly of almonds. We recommend this for use with all dishes.
EXTRA VIRGIN OLIVE OIL "CARTE NOIRE"
An oil with low acidity obtained by a dripping process, without the use
of pressure, using selected "Taggiasca" olives. Four hundred kilos of
olives are used to produce eight kilos of this exceptional oil. It is
therefore produced in limited quantities; about 4000 bottles every year
which are numbered. We recommend this oil with seafood or delicately flavoured
dishes.

SPECIALITIES
LIGURIAN PESTO
Traditional Ligurian sauce made from basil, garlic and pineseeds. Excellent on pasta or for adding flavour to soups.
RED PESTO
Sauce made from tomatoes, basil, garlic, walnuts and "grana padano" cheese. Excellent on pasta.
"ORGANIC" SAUCE
Made from tomatoes, onions, carrots, celery, basil and salt. Ideal for meat and pasta sauces.
OLIVE PASTE
Made from finely chopped "Taggiasca" olives, excellent with crackers or for adding flavour to any dish.
OLIVES IN BRINE
Selected Taggiasca olives harvested by hand and kept in salt water for months. Excellent with drinks or toghether with salads, meat or fish.
SUN DRIED TOMATOES IN OIL
Tomatoes cut in half, salted, dried in the sun, seasoned with natural flavourings and conserved in ROI Extra Virgin Olive Oil.
CHOPPED SUN DRIED TOMATOES IN OIL
Sun dried tomatoes finely chopped with ROI Extra Virgin Olive Oil.
GREEN SAUCE
Made from parsley, capers, garlic, anchovies, walnuts, ROI Extra Virgin Olive Oil and vinegar. Excellent for boiled meats.
WALNUT SAUCE
Made from walnuts, hazelnuts, "grana padano" cheese and ROI Extra Virgin Olive Oil. Excellent as a dressing or as a filling for fresh pasta.
ARTICHOKE PASTE
Made from small finely minced artichokes, combined with oil, vinegar and natural flavourings.
ARUGULA CREAM
Made from arugula greens, ROI Extra Virgin Olive Oil and salt. Excellent on fish or salads.
"BAGNA CAUDA"
A sauce from the ancient culinary traditions of the Piedmont and Liguria
regions, made from anchovies, garlic and ROI Extra Virgin Olive Oil.
